This is a one year career + technical education (CTE) program designed for sophomores, juniors and seniors who wish to pursue a career in the Hospitality Industry.

My Vision
My hope for each student is that by enrolling in the Culinary Arts program that they will enjoy the class by learning basic and intermediate skills needed to make them successful. By teaching the Workplace Readiness Skills along with the culinary skills, students will be better prepared for employment and/or post secondary education opportunities in the food industry.
Term 1
A “hands-on” entry level culinary course that introduces the students to learn how to work with a small group in a professional kitchen. Students will learn “step by step” cooking techniques while gaining knowledge for employment in the hospitality industry, as well as entrance into college programs with a Hotel/Restaurant or Culinary Arts focus. They will learn about food safety and sanitation, how to use professional cooking equipment, basic cooking techniques, culinary terminology and culinary math. This program will teach them to efficiently prepare and cook food at home or in a professional setting. Students will also learn leadership, communication and organizational skills that they will use for the rest of their lives. Students may have the opportunity to participate in some large catering events held on and off campus.
Term 2
The Advanced students continue to improve on the skills that were learned in T1, including focus on the importance of Food Safety Sanitation. This course will emphasize Global Cuisines, which include ethnic flavors from around the world. Students will learn about meal planning. T2 students will learn more about event planning and have priority status for participating in catering jobs.
T2 students will supplement their learnings by studying from the following textbooks; ProStart Y1 & Y2, Intro to Culinary Arts and Foods for Today. They will also have a chance to participate and enter the annual California ProStart Cup and the FHA-Hero Competitive Recognition Events. Both competitions can earn scholarships and various other awards.
T2 students will learn basic job skills needed to work in the food industry. Once a month, will have the chance to cater to the staff which allows students to learn various skills such as customer service, cash register management; food serving bussing, hosting, line cooking and other job related responsibilities by transforming the kitchen classroom into a cafe.
T2 students will have the opportunity to participate in various Hospitality Related school activities including: college tours, Experience Hospitality [A ProStart Event], CIA Webinar, CIA ProStart Bootcamp, FHA Leadership Events and other ProStart Events.
